Even before he disappeared for thirty years, he was living in a shack and not talking to anyone, to the point that the people of Gravity Falls didn't find anything odd about Stan's behavior changing "Ford's" personality over night.
Anyway, I definitely feel like Ford was projecting onto Dipper, and later probably realized "that offer was kind of crazy, also I literally haven't met your parents despite them being my nephew and his wife." Most post-canon fics have Dipper as Ford's apprentice in some way that doesn't involve them living alone in a cabin in the woods.
I could definitely see it.
Ford's big character development in the show was realizing his reaction to Bill tricking him shouldn't have been "I can't trust anyone but myself and other people will drag me down, so I have to close myself off" (which he tried to impart to Dipper at first), but instead "I need to stop being so narcissistic about my place in things and open up to other people."
So after he has that realization, yeah. I could totally imagine him offering an apprenticeship to Dipper in a way that wouldn't get him arrested, traumatize Dipper's sister and probably his parents, and impart entirely unhealthy ideas in Dipper's head.
I've read a few of those fics myself, and enlightened Ford is definitely a thing I wish we had gotten more than a couple scenes of in the show (and Lost Legends) itself.

He did mention he made the mind control tie for "Ronald Reagan's masters", which...implies he had *something* to do with certain high-ranking people at some point in his life.
...and that he might have aided the Reagan administration in some way, which is a big "What the fuck, Ford?" moment.
Its like Ford really needed a serious reality check and he got one in the form of weirdmageddon

Like, I have seen people frame Dipper not staying with Ford like it is him throwing away his entire future.

It would have been way different if anyone would have said Dipper can live in California and go to school and all there, and during the summer he can return to Gravity Falls with Ford to be an apprentice and see Wendy and other friends and aquaintances. Same with Mabel.
Right, that's why Ford's offer was crazy. Most post-canon fics go with the "part-time apprentice until you're at least out of high school (and maybe college)" instead of "drop everything and everything you know right now."
Yeah, Ford is very technologically skilled, but not necessarily a great educator. His previous apprentice didn't turn out so great, poor soul
